A pupusa is a thick, handmade corn tortilla stuffed with fillings pressed, patted, and sealed by hand, one by one. No machine has ever made a proper pupusa. The dough is masa, the skill is generational, and the result is something El Salvador has been perfecting for over 1,400 years.

It is the national dish. It is breakfast, lunch, dinner, and late-night comfort. It is what a Salvadoran mother makes when someone she loves comes home.

Served with Curtido — fermented cabbage with carrots and chili, tangy and crunchy, made in-house. And Salsa roja — a cooked tomato sauce, smoky and simple. Both are non-negotiable. Pour them on. Don't be shy.
